Thermomix Sun-dried Tomato and Lentil Salad
The Sun-dried Tomato and Lentil Salad is topped with the flavours from the tahini balsamic dressing. This thick dressing coats all the ingredients in the salad which gives it a bigger burst of flavour. You can taste it in every mouthful. I love to make this quick salad for a healthy snack so I always have a can of lentils and the dressing ingredients on hand. That way I have no excuse not to make it.

However a list of ingredients is provided to help you with your shopping list and meal planning (especially helpful if you use the paprika recipe app) and also some tips.
Here is a list of ingredients you will need to make this recipe.
- brown lentils (tin or dried)
- tahini balsamic dressing
- baby spinach
- sun-dried tomatoes
- pitted kalamata olives
- red onion
- fresh basil
- feta (optional)
- Make your own tahini and/or balsamic vinegar reduction ahead of time and store them in the fridge. That way you will have the ingredients on hand to make up the dressing for when needed.
- You can substitute the sun-dried tomatoes for cherry tomatoes
- Add some roasted pumpkin, sweet potato or caramelised onion for an additional flavour combination.
