
Thermomix Pomegranate Brown Rice Salad
This Pomegranate Brown Rice Salad uses the Pomegranate Molasses from the Salad Collection as a dressing. To make the Pomegranate Molasses I first use these Thermomix instructions to peel my pomegranate and make the juice. Then I continue on with the recipe in the Salad Collection cookbook to make the molasses.
This recipe is one that was inspired by Sia’s mother-in-law Skevi. She takes a lot of time and care when preparing food, especially salads. She cuts each ingredient so that it is exactly the same size. When collecting the seeds from a pomegranate, Skevi will sort through each seed to ensure that there is no white peel. No seed is ever wasted or lost during the process. Sometimes, Skevi will also include a spoonful of honey to add sweetness and a handful of roasted walnuts, which is a family recipe from her Thea Andre in Cyprus.
