
Thermomix Greek Salad With Potato
This Thermomix recipe for Greek salad with potato is a pretty special recipe. It was my recreation of the salad we had while holidaying on my husbands family island, Lemnos. My husband was learning to kite surf with his uncle Aristithi and “the best wind” was on a beach about an hour’s drive away from where we were staying. When we finally got to the beach, I was a bit worried because the place was isolated, and it didn’t look like there was anywhere to get food. But then we found this little food van set up with a couple of tables in front of it. At first, I didn’t know what to expect but after tasting the food, I can now say that it was one of the best experiences that we had on the island. They served a Greek salad that had potatoes in it and it tasted amazing! I later learnt that it is traditional to add potatoes to a Greek salad on the Island of Lemnos.
I remember taking a photo at lunch of the salad and I knew that it would defiantly have to feature in my next cookbook. Then when I had the privilege of having it photographed for the book, I was overwhelmed with excitement on the memories it brought back. With the combination of the Greek Salad Dressing method, the flavour of this salad is not to be underestimated. The dressing coats each potato and the flavour will burst in your mouth.

- red onion
- capsicum

- dirty brushed potato
- tomato
- cucumber
- kalamata olives or pitted olives
- feta
- pickled peppers
- capers
- olive oil
COOKING TIP
- slice capsicum into strips and onions into rings if preferred
