Make the Ricotta Cheese

Start by making some homemade ricotta so it has time to strain and thicken. It is very simple to do and this recipe can also be found in the Mezze Cookbook. Of course if you prefer to bought store bought you can do that also.

Cheese Pastry Dough

Make sure you follow the steps in the cookbook to make the Cheese Pastry dough. Once you make the dough, cover it with a towel or wrap it in a mat so it can rise.

Cheese Filling

Next you need to make the filling. Use the strained ricotta and other ingredients in the Anari Tiropita recipe to make the filling. Now, boil some sesame seeds to use in coating your little cheese parcels. Now you need to set up your work space. Set the dough to one side. Have knife or roller ready. I use a pizza cutter to cut the dough on a chopping board. Put filling aside along with a little bowl of egg to coat the parcels and the boiled sesame seeds.

Tiropita Cheese Pastry

First, add some wet sesame seeds to mat or chopping board. Put some dough on top of the sesame seeds and roll the dough out into a round circle. Use your pizza cutter or a knife to cut the dough into small pizza shapes eighths. Add a little of the cheese filling to each end and roll them up. Lastly, put them on a tray, coat them in the egg mixture, then they are ready to be cooked.

I hope you enjoy this very special family recipe that was handed down from me from our be lated and very much loved Yiayia (Grandma) Barbara. Make the Olive Bread Dough

Set the dough to one side. Have knife or roller ready. I use a pizza cutter to cut the dough on a chopping board. Put filling aside along with a little bowl of flour and some sesame seeds. Make sure you use a wet tea towel with the sesame seeds on top or they won’t stick to the dough as well.

Time to create you olive sticks

First, roll out the dough twice in the pasta maker going thinner each time and careful not to rip the dough. Slice the dough up. Add a little of the olive mixture to a length of dough, wrap up and enclose well. Roll the stick in sesame seeds ensuring to cover it all and set on a tray to cook.

Make the Butter Biscuit Dough

To start make sure you follow the steps in the cookbook to make the butter biscuit recipe. If you need a bit more of a guide you can check out the video on this blog post too.

Allow the dough to rest

Once you make the dough, cover it with a towel to rest. This gives the dough time to set and reduces how sticky it is so it’s much easier to work with.

Use a cookie press to create the cookies

Cookie Pressed Butter Biscuit

I like to use a cookie press to get perfectly formed cookies. You can create so many different shapes, quickly and with very little effort. I’ve only ever used a stainless steal cookie press like this one as I’m told it gives a sharper finish to the biscuit. However, I’ve never tested any others as I’ve been so happy with the one I have. I’ve had it for at least 15 years! I think my Mums one tops mine at 30 years though… I really think they last that long because of the quality.

Time to decorate your Butter Biscuits

The hardest decision you’ll have is choosing how you would like to decorate them. You could add some jam to the middle of the biscuit before cooking them or add some in between two plain ones. Why not try dipping them in chocolate or keep it simple by just leaving them as they are.

Steps to creating a healthy Thermomix soup

Do you ever just want to throw a few ingredients together and have dinner done? I’ve got you covered with some easy steps to creating delicious healhty soups. Use some leftovers or quickly chop a few things up, either way you will have something delightful to gobble down in no time!

In this video I share some basic steps to creating a soup. Use this to guide you in putting together many different flavoured soups.

Prep your ingredients

Firstly, you need to prep your salad ingredients. Refer to the “salad bowl” section in our Salad Collection cookbook for these steps. Set them aside ready for using.

Pre Prepped Salad Ingredients

Add your base flavour

Now you can start off with chopping or using pre chopped onion, garlic, ginger or chilli – (3 seconds/speed 7). Use a mix or all depending of the flavour you are trying to create. You can sauté these off with a little butter, oil or fat if you like – (3 minutes/100 degrees/reverse/speed 1). Every extra step you do will create an additional level of flavour!

You can chop your bacon or ham in the same step as your garlic and onion.

Add your vegetables and meats

Next, add the hard vegetables if you are using any. For example, some carrot, sweet potato and pumpkin. Be sure to pre chop these. You can sauté them as well if you prefer. I usually go straight into adding a liquid. If you’re using raw meats then cube and add these at this stage as well as they will need longer cooking. Add leftover meat at the end with the soft vegetables.

Choose your soups liquid

Then, you need to choose the type of liquid you are going to use to cook your soup in. This is one of the keys to creating the specific flavour you’re trying to create with your soup. For example, if you’re cooking a basic vegetable soup you could use vegetable broth, a chicken soup with chicken stock, an asian soup could be miso paste with water or as a bare minimum just add water. Remembering we are trying to add the different levels of flavour depending on what we are trying to create.

Add seasoning and soft vegetables

Finally, once you have cooked the hard vegetables and any raw meats its time for the final step. Season and cook any remaining soft vegetables. These are ones that only need a few minutes of cooking like bok choy, frozen veggies, herbs, asparagus or anything else your palate desires.

How to make a fast Thermomix pizza

Friday nights are usually the nights I will go out for dinner or I will make a fast pizza to feed the tribe. I want to show you how I use my Thermomix and Salad Collection cookbook to help me create different flavour packet pizzas in minutes.

Chop Your Veggies

To start with, be sure to have some veggies chopped up to use. If you haven’t pre chopped anything you will need to refer to the salad bowl section in the Salad Collection cookbook to guide you on prepping some ingredients. This is what helps in making a super fast pizza night.

I often chop up a heap of veggies for the week to make various things. You can check out my list in this blog post. I use the leftover veggies for the week to make the pizzas. Its pretty versatile to throw anything on top of a pizza base. I even use some of the raw veggies on a precooked base like the seeded cracker recipe from the Salad Collection cookbook. You could top the seeded spread with some fermented cashew dill dip too. YUM!

The other thing I love about pizzas is changing the base depending on what ingredients are in the pantry and who is eating it. We have a heap of dietary requirements in my family. Thankfully, its easy to change the base with the help of my Thermomix. Here is a list of a few pizza bases we use for our pizzas:

Now, all that’s left is assembling the pizzas. It’s as simple as that. Pizza night could not get any easier. Now, it just leaves you deciding on what to put on it! Chocolate Dipped Butter Biscuits

There are so many ways to make your butter biscuits fancy but one of our favourite methods is to dip them into chocolate. That is, ANY chocolate. White, dark, milk or a mixture.

It is a very simple technique to making your biscuit a little more elegant for a special occasion, gift or event. However, we want to give you some tips to getting the perfect texture to ensure it looks great. Today we share some tips on how to make sure your chocolate is perfect for dipping your biscuits in.

Chocolate Dipped Butter Biscuits

Firstly, start with enough chocolate so that the biscuit depth can be dipped in. For example, use a small deep cup so the biscuit doesn’t touch the bottom and you don’t need kilos of chocolate to fill a big bowl.

Secondly, use your Thermomix or Thermal appliance to melt your chocolate. This will give you a smooth and consistent result. Add 100g chocolate pieces to your bowl and chop 5 seconds/speed 9. Add 30g copha and melt 3 minutes/50 degrees/speed 3 or until completely melted. Pour into a cup or small deep bowl and then its ready for dipping your biscuits into.

Get to know your chocolate. Not all chocolate is created equal. Depending on the chocolate you use it may be too thick so we like to add some copha when melting it to make it smoother, thinner and easier to dip. Ensure it is completely melted before dipping your biscuits in so you don’t get lumps.
