Here is a video snippet to show you how easy it is to make the Cheese Pastry Anari Tiropita recipe for your Thermomix. For those of you that are a little bit more advance and don’t need the step by step instructions, this quick overview will be right up your alley. It will show you the technique to make them.

Cheese Parcels

The recipe is exclusively featured in the Mezze cookbook but I know so many of us learn by seeing so I want to make sure you not only have these recipes but know how to cook them too!

Make the Ricotta Cheese

Start by making some homemade ricotta so it has time to strain and thicken. It is very simple to do and this recipe can also be found in the Mezze Cookbook. Of course if you prefer to bought store bought you can do that also.

Cheese Pastry Dough

Make sure you follow the steps in the cookbook to make the Cheese Pastry dough. Once you make the dough, cover it with a towel or wrap it in a mat so it can rise.

Cheese Filling

Next you need to make the filling. Use the strained ricotta and other ingredients in the Anari Tiropita recipe to make the filling. Now, boil some sesame seeds to use in coating your little cheese parcels. Now you need to set up your work space. Set the dough to one side. Have knife or roller ready. I use a pizza cutter to cut the dough on a chopping board. Put filling aside along with a little bowl of egg to coat the parcels and the boiled sesame seeds.

Tiropita Cheese Pastry

First, add some wet sesame seeds to mat or chopping board. Put some dough on top of the sesame seeds and roll the dough out into a round circle. Use your pizza cutter or a knife to cut the dough into small pizza shapes eighths. Add a little of the cheese filling to each end and roll them up. Lastly, put them on a tray, coat them in the egg mixture, then they are ready to be cooked.

I hope you enjoy this very special family recipe that was handed down from me from our be lated and very much loved Yiayia (Grandma) Barbara. Thermomix Watermelon and Ricotta Salad

The Watermelon and Ricotta Salad is recipe that remind me of my childhood. Growing up Greek, I always remember one of my favourite breakfasts would be watermelon and anari (ricotta). The combination is amazing, and they just go so perfectly together. We would set up a little table of mezze including marinated olives, homemade bread, ricotta and watermelon and enjoyed nibbling at everything as we sat together to eat.

Everyone makes tiropitas a little bit differently. Some people use filo pastry and other people prefer puff pastry, but this is the best I have ever come across. In Greek, tiri translates to cheese and pita means bread/pastry. So, these delightful little bites are in fact “cheese pastries”.

Sia’s aunty Sylvia will often make these tiropita’s at Easter time. However they can be eaten at any time of year. They can also be batch made and frozen.

    I have made two items so far from the cook book. The traditional greek yogurt, so yummy and so easy. I was happy I could make it thicker than I usually buy it. I also made the rice pudding which was amazing and also very easy. I normally don’t like rice pudding so was very happy with the recipe.
