Chicken, Avocado and Apple Salad

This is a recipe for Chicken, Avocado and Apple Salad you can make in your Thermomix. It is just one of the recipes featured in the Pre Detox Treat ebook converted for your Thermomix in collaboration with Dr Sandra Cabot.

These recipes are designed to set you up before you detox so that you can already be enjoying some amazingly delicious whole foods. You will enjoy them so much that you will surely add them to your weekly meal plan.

Chicken, Avocado and Apple Salad

INGREDIENTS

10g fresh parsley
1 garlic or 1⁄2 tsp of garlic powder
150g apple, peeled, cored and quartered
50g or 1 stick of celery, roughly chopped
45g or 1⁄4 red onion, peeled
265g or 2 breasts of cooked chicken, chopped into 2cm pieces
100g or 1 avocado, sliced
20g extra-virgin olive oil
10g or 1⁄2 fresh lime juice
1⁄2 tsp sea salt
freshly ground black pepper to taste

STEPS

1. Add parsley (10g) to bowl.
2. If using fresh garlic (1), add to the bowl and chop 3 second/speed 7.
3. Add apple (150g), celery (50g) and red onion (45g) to bowl and chop 10 seconds/speed 4 or until roughly chopped.
4. Scrape down sides. Add all other ingredients: chicken (265g), avocado (100g), olive oil (20g), lime juice (10g), salt (1⁄2 tsp) and pepper to taste. Mix 5 seconds/reverse/speed 3.
5. Serve as a salad.

Thermomix Greek Salad With Potato

This Thermomix recipe for Greek salad with potato is a pretty special recipe. It was my recreation of the salad we had while holidaying on my husbands family island, Lemnos. My husband was learning to kite surf with his uncle Aristithi and “the best wind” was on a beach about an hour’s drive away from where we were staying. When we finally got to the beach, I was a bit worried because the place was isolated, and it didn’t look like there was anywhere to get food. But then we found this little food van set up with a couple of tables in front of it. At first, I didn’t know what to expect but after tasting the food, I can now say that it was one of the best experiences that we had on the island. They served a Greek salad that had potatoes in it and it tasted amazing! I later learnt that it is traditional to add potatoes to a Greek salad on the Island of Lemnos.

I remember taking a photo at lunch of the salad and I knew that it would defiantly have to feature in my next cookbook. Then when I had the privilege of having it photographed for the book, I was overwhelmed with excitement on the memories it brought back. With the combination of the Greek Salad Dressing method, the flavour of this salad is not to be underestimated. The dressing coats each potato and the flavour will burst in your mouth.

I take great pleasure and pride watching my family cook. My culture is very passionate about their food as its like a love language to them. Through cooking it, sharing it with others and giving it out to friends and family we get to express this. This may be a simple dressing but it’s one we get to make in the kitchen together that has a lot of sentimental memories attached to it.

My Aunty (Thea) Diane is often the one in the kitchen beating the ingredients together with a fork. By doing this her dressing becomes creamy, juicy and froths up the dressing. This makes it nice and thick which then helps to coat each ingredient in the salad. This recipe is also really pleasant over some steamed fish, fresh seafood like bugs and oysters or over some Thermomix steamed vegetables.

This is an easy potato salad recipe you must try! It is a pretty special recipe to me as it was given to me by a very special family member. Whenever Brenda joins us for a family function we can count on her yummy potato salad to be a crowd pleaser. It is a great dish to add to your souvla in the back yard, which is a charcoal barbecue. You can easily make it up the day before, store it in the fridge and serve cold the next day. The flavour of the homemade spicy mayonnaise just helps it develop over time.

    This brings back some wonderful childhood memories of family dinners and the mouth watering smells wafting through the house. Thank you for “Thermomixing” the recipes to make it easier to recreate them for my family. Well done girls!!!

    I have made two items so far from the cook book. The traditional greek yogurt, so yummy and so easy. I was happy I could make it thicker than I usually buy it. I also made the rice pudding which was amazing and also very easy. I normally don’t like rice pudding so was very happy with the recipe. I’m looking forward to cooking all the other yummy recipes especially the cheeses and the souvlaki.
