Chicken, Avocado and Apple Salad

This is a recipe for Chicken, Avocado and Apple Salad you can make in your Thermomix. It is just one of the recipes featured in the Pre Detox Treat ebook converted for your Thermomix in collaboration with Dr Sandra Cabot.

These recipes are designed to set you up before you detox so that you can already be enjoying some amazingly delicious whole foods. You will enjoy them so much that you will surely add them to your weekly meal plan.

Chicken, Avocado and Apple Salad

INGREDIENTS

10g fresh parsley
1 garlic or 1⁄2 tsp of garlic powder
150g apple, peeled, cored and quartered
50g or 1 stick of celery, roughly chopped
45g or 1⁄4 red onion, peeled
265g or 2 breasts of cooked chicken, chopped into 2cm pieces
100g or 1 avocado, sliced
20g extra-virgin olive oil
10g or 1⁄2 fresh lime juice
1⁄2 tsp sea salt
freshly ground black pepper to taste

STEPS

1. Add parsley (10g) to bowl.
2. If using fresh garlic (1), add to the bowl and chop 3 second/speed 7.
3. Add apple (150g), celery (50g) and red onion (45g) to bowl and chop 10 seconds/speed 4 or until roughly chopped.
4. Scrape down sides. Add all other ingredients: chicken (265g), avocado (100g), olive oil (20g), lime juice (10g), salt (1⁄2 tsp) and pepper to taste. Mix 5 seconds/reverse/speed 3.
5. Serve as a salad.

Cheese Bacon and Onion Brekkie Muffins

This is a recipe for Cheese Bacon and Onion Brekkie Muffins you can make in your Thermomix. One taste of these delicious grain free muffins and you will be hooked. They are filling, tasty, quick little snacks you can enjoy at any time of day. You may just need to hide them from the kids because I don’t think there will be enough to share.

To help you recreate these muffins easily not only have I converted the amazing recipe from Dr Sandra Cabot but I also share a step by step video so you cannot go wrong with them!

Cheese Bacon and Onion Brekkie Muffins

Cheese Bacon and Onion Brekkie Muffins

INGREDIENTS

45g flaxseed
70g cheddar cheese, cubed
215g sweet potato, peeled and cut into 3 cm pieces
5g fresh parsley
100g brown onion, peeled and halved
100g or 1⁄2 leek, roughly chopped
135g bacon, rind removed and roughly chopped
30g olive oil
50g almond meal
Pinch sea salt
6 organic eggs
80g water

STEPS

1. Preheat oven to 180 degrees fan forced and grease a muffin tin.
2. Add flaxseeds to bowl and mill for 10 seconds/speed 10. Set aside.
3. Add cheese (70g) to bowl and grate 3 seconds/speed 7. Set aside in the flaxseeds bowl.
4. Add sweet potato (215g) to bowl and grate 3 seconds/speed 7. Set aside with cheese and flaxseeds.
5. Add parsley (5g) to bowl and grate 3 seconds/speed 7.
6. Without scraping down sides, add onion (100g), leek (100g) and bacon (135g) to bowl and chop 3 seconds/ speed 5. Scrape down sides.
7. Add oil (30g) and sauté 5 minutes/ 100 degrees/reverse/slowest speed.
8. Add all other ingredients: almond meal (50g), pinch of salt, eggs (6), water (80g) and grated ingredients: flaxseeds, cheese and sweet potato.
9. Whisk together 15 seconds/ reverse/speed 3.
10. Pour mixture evenly between muffin cups and place tray in the oven.
11. Bake for 25 minutes or until cooked through.

This Thermomix recipe for pasta elias olive dip is one of my Dad’s creations with some of his many marinated olive creations. My dad is very passionate about his olives. He has hundreds of olive jars around the house all marinating with different flavours. A dip made with George’s olives will have an intense flavour, one that cannot be compared to any store bought olive. If you are lucky enough to visit my dad, he will probably share his olives with you. However, if you want to make this dip with a different type of olive we suggest that you use a good quality kalamata olive.

Tabouli is traditionally made with bulgur wheat however gluten free substitutes can also be used such as cauliflower rice, quinoa or hulled millet. You can even leave out the grains altogether and enjoy it as a fresh addition to some souvlakia in a pita bread.

Homemade Thermomix tabouli is also lovely served with falafels, marinated chicken or dukkah eggs.

I remember eating this pasta salad on the weekends after mum did her grocery shopping. I would make a chicken sandwich and load the pasta salad inside. I love that I can recreate these childhood dishes with the use of my Thermomix to be homemade, without preservatives and to suite my families dietary requirements. Be sure to make the creamy mayonnaise to go with it as thats where it gets the creamy tangy flavour from. It will definitely have you going back for more.

This recipe for Fennel and Cabbage Salad is my take on one of our weekend lunch salads at Dad’s place. Most weekends we go to my father-in-law’s house for lunch. He often makes beautiful salads with fennel. Fresh fennel is not an ingredient that I have personally used much in the past, but my father-in-law showed me how to easily incorporate it into my recipes. This recipe explodes with flavour so if you have never tried fennel I would highly recommend giving this recipe a go.

So gorgeously presented, you can feel the love of family oozing from between it’s pages, bringing a sense of home to each amazing recipe. Cannot recommend this book enough, a must have for anyone who loves Greek cuisine!!!

    I have made two items so far from the cook book. The traditional greek yogurt, so yummy and so easy. I was happy I could make it thicker than I usually buy it. I also made the rice pudding which was amazing and also very easy. I normally don’t like rice pudding so was very happy with the recipe. I’m looking forward to cooking all the other yummy recipes especially the cheeses and the souvlaki.
