Thermomix Fermented Cashew Dill Dip

This recipe for Thermomix Fermented Cashew Dill Dip is one we go through a lot of in my house. I used to be a bit scared of fermenting foods but then I became totally obsessed with a cashew dip that I found at a health food store! I literally could eat it by the jar. It has a creamy, tangy, fresh flavour that gets your taste buds dancing. It is a surprising dairy free dip that is enjoyed by even my dairy loving friends.

I get so much more satisfaction from my food when I’ve made it myself, so of course I had to recreate my favourite dip to have at home. To anyone who’s been to my house and had this dip, you now have the recipe to make it yourself. As you make it, please remember the beautiful times and good conversations that we shared over this dip!

Thermomix Fennel and Cabbage Salad

This recipe for Fennel and Cabbage Salad is my take on one of our weekend lunch salads at Dad’s place. Most weekends we go to my father-in-law’s house for lunch. He often makes beautiful salads with fennel. Fresh fennel is not an ingredient that I have personally used much in the past, but my father-in-law showed me how to easily incorporate it into my recipes. This recipe explodes with flavour so if you have never tried fennel I would highly recommend giving this recipe a go.

My husband’s yiayia, Barbara taught me how to make these dolmades. She grows her own vine leaves in the garden and when they are in season, she will freeze batches of the leaves so that we can have them all year round. Essentially you can stuff the vine leaves with anything you like.

  • beef mince
  • salt and pepper
  • brown onion
  • spring onions
  • carrot
  • capsicum
  • zucchini
  • parsley
  • dill
  • mint
  • arborio rice
  • egg
  • water
  • white vinegar
  • olive oil
  • lemon juice

THERMOMIX COOKING TIPS

  • To make vegetarian dolmades, just use a mixture of rice and vegetables.
  • Mince your own beef using a Thermomix
  • Fresh grape vine leaves are preferred when making dolmades. However they can be purchased from a local continental deli in a jar or from a tin.
  • Cabbage or spinach leaves can be used as an alternative.
  • Essentially you can stuff dolmades with anything. Use a mixture of meat, rice and vegetables. Flavour with herbs and a bit of salt and pepper!

    I have made two items so far from the cook book. The traditional greek yogurt, so yummy and so easy. I was happy I could make it thicker than I usually buy it. I also made the rice pudding which was amazing and also very easy. I normally don’t like rice pudding so was very happy with the recipe.
