Thermomix Cauliflower Rice
It is very easy to make cauliflower rice using a Thermomix. I like to use cauliflower instead of traditional rice as it is a gluten free and healthy option for my family. It's also a great way to sneak extra veggies into family meals without the kids recognising it. They actually love it with this Paleo Mongolian Beef recipe which is a regular in our house. I like to serve cauliflower rice as a side to curries, in paella, as fried rice, in salads or poke bowls.
The full cauliflower rice recipe is featured in the Salad Collection cookbook. It is a great alternative to grains and can be used in tabouli or a salad bowl.

INGREDIENTS
- 500g water
- 550g or 1 large cauliflower

- For extra flavour add chopped herbs such as mint, parsley, coriander, basil or thyme.
