It is the creamiest, slightly tangy and most delicious lemon curd around. Did I tell you it was a set and forget type of recipe as well! You will love it. Not only is the recipe easy as but there are endless ways to use lemon curd as well. Check out my list here for some ideas.

Lemon Curd
INGREDIENTS
100g white sugar
220g lemon juice, freshly squeezed from about 4 lemons
65g unsalted butter, cubed
6 eggs
STEPS
1. Place sugar (100g), lemon juice (220g), butter (65g) and eggs (6) into mixing bowl, then cook 12 min/80°C/speed 4.
2. Pour into a container and allow to cool.
3. Once cool cover and refrigerate.
NOTES
Allow the mixture to cool and set before using. It is best put into tarts once it is cold. If using small tart cases put the curd into a piping bag to be able to squeeze into the cases.
You can use the curd to fill a pre- baked tart, make mini tarts, use an almond or cashew pastry for a gluten free option, top with fruit or meringue or just eat it by the spoonful.
Mixture can be frozen.
