Avgolemono Soup
Avgolemono is a Greek style egg and lemon soup. It is traditionally made at Easter time but Avgolemeno is also made throughout the year too.
Our yiayias and our mothers make avgolemeno soup whenever someone in the family is sick. There is something magical about this soup. It always seems to make you feel better.
Now that we are mother's ourselves we now understand that the healing magic comes from the chicken legs. The soup is made on a bone broth from the chicken legs and then we add lemon, egg and rice.
Bone broth is known to heal the gut and help with recovery and immunity. The lemon cleanses the body, the egg is full of protein and the rice is a carbohydrate that gives an energy boost.
