CHEESEFARE SUNDAY
The last Sunday before Orthodox lent is known as cheesefare Sunday or Forgiveness Sunday. Traditionally, it is the last day to eat dairy products before Easter.
Here is a list of our favourite cheese recipes for you to try. Most of these recipes are featured in the Mezze Cookbook and all of the recipes can be made in your Thermomix. 7 Greek Cheese Recipes That You Can Make In Your Thermomix:
1. Halloumi – Cypriot Cheese
The best halloumi is made with raw, unpasteurised goat’s milk. This type of milk is not always accessible and so unhomogenised cow’s milk is an alternative option. Goat’s milk halloumi is more white in colour and cow’s milk halloumi tends to be more yellow. We love the fact that you can make halloumi cheese from scratch with a Thermomix!

2. Mizithra – Greek Ricotta
Have you ever tried to make homemade ricotta? It is really easy to do in a Thermomix. You will need a 2.2L bowl to make our recipe (a Thermomix TM5) otherwise half the ingredients to make a smaller batch.

3. Spanakopita – Spinach Pie
We use a mixture of feta cheese, cheddar cheese and ricotta cheese in this spanakopita and it tastes delicious. The pie can be pre-made ahead of time and then stored int the freezer until needed. However we find that it doesn't last very long in our kitchen. It tastes delicious served warm when it is fresh out of the oven.

4. Tiropita – Cheese Pastries
Thea Sylvia usually makes these cheese pastries at Easter time, but they are delicious to eat all year round. The quantity of the recipe makes a fairly large batch – about 50 pieces. The pastries can be frozen once cooked however they don't seem to last very long in our kitchen.

5. Anari Tiropita – Small Ricotta Pastries
Everyone makes tiropitas a bit differently. Some people use filo pastry and other people prefer puff pastry. This recipe is made with a homemade pastry and filled with Cypriot style ricotta cheese.

6. Tiropita Pita – Cheese Pie
Yiayia barbara's tiropita pita is a secret family recipe. People always talk about it and make a comment after tasting it for the first time because it is amazing. It has a beautiful bubbly texture on the inside and looks different to normal cheese pies.
