For Greek Easter we hard boil eggs and colour them red to symbolise Anastaci – the resurrection of Christ and new life. Cracking the eggs is a fun game to play with children and family. The hard shell of the egg symbolises the sealed Tomb of Christ and the cracking of which symbolises his resurrection from the dead. However not everyone eats the eggs after they crack them. There is always so many eggs left over the next day.

1. Peeled Breakfast Eggs
Peel the eggs and eat them for breakfast. Sometimes the kids (and husbands) wont eat the eggs because they don’t like to peel the shell. So if you peel the eggs and put them on a plate, they are more likely to be eaten.
Serve with some avocado, pita, fruit and what ever else you have left over from Easter lunch.
2. Eggs On Toast
Slice the eggs and put them on toast.
Add a bit of salt & pepper.
You could also add: cheese, tomato, cucumber, avocado, butter, sauce – whatever you have in the fridge.
3. Egg Salad
Make a salad, similar to a Greek salad but add egg. Cut up lettuce, tomato, cucumber, egg and add some olive oil & salt.
4. Potato Salad
Cut the eggs in halves or quarters and add them to your potato salad.

6. Egg & Lettuce Sandwich
