Pink and White Coconut Ice
Try this recipe the next time you need to make something pink for a fundraising event, party or special celebration.
INGREDIENTS
WHITE ICE
- 250g desiccated coconut
- 500g icing sugar
- 80g water
PINK ICE
- 250g desiccated coconut
- 500g icing sugar 80g water
- pink food colouring
STEPS
- Line a slice tray with baking paper or use a silicone tray.
- Make the white ice rst. Add desiccated coconut (250g) and icing sugar (500g) to the bowl. Mix for 10 seconds/reverse/ speed 5.
- Scrape down the sides, then add water (80g). Mix for 10 seconds/reverse/ speed 5.
- Spread the white ice mixture evenly in the tray.
- Without washing the bowl, make the pink ice. Add desiccated coconut (250g) and icing sugar (500g) to the bowl. Mix for 10 seconds/reverse/speed 5.
- Scrape down the sides, then add water (80g) and pink food colouring. Use as much food colouring needed to achieve the desired shade of pink. Mix on reverse/speed 5 until the colour is mixed through.
- Spread the pink ice mixture evenly over the top of the white ice mixture. Refrigerate for at least 2 hours, overnight or until firm.
- Cut the coconut ice into squares. Serve with the pink side up, the white side up or alternate the colours to show both.

NOTES
- An easy slice to make for parties and special events such as Think Pink Day or other Breast Cancer Fundraisers.
- Use a food colour of choice to change the colours of the coconut ice. Make red and green for Christmas or orange and red for Halloween.
